I am off on my travels again on Monday and heading to Copenhagen for a trade show.  So, I decided to dedicate this post to the fabulous Danish restaurant,  Väkst.

Danish for ‘growth’ – Väkst has a similar vibe to the Ace Hotel and Hoxton – hip, moody and a little bit cool. Having launched in 2016 the eatery’s concept is based around summer garden vibes, (which I love) with gorgeous string lights and an abundance of pot plants, giving it a calm and earthy greenhouse vibe. I love their bold decision to bring the outside in with botanicals hanging from ceilings and scattered throughout the space – it’s where I would like to be eating right now!

This natural, earthy edge has also been transferred  over to their fabulous food, with a rustic feel and fresh produce. The focus on the food is all about vegetables with the meat being the sideshow – a great spot for those who care about what they eat, and where they eat it.
